Recipe 42 - Oh ddduhduhdear! Vegan Bulgogi

Ah Korea.. they bring such cute babies into the world.  And apparently they make some good Bulgogi.

Yes, that's what my final asian month veganization is going to be.. Korean Bulgogi.

Let's talk about this, shall we?

Bulgogi is a Korean dish that usually consists of marinated barbecued beef, chicken or pork. It is listed at number 23 on World's 50 most delicious foods readers' poll compiled by CNN Go in 2011.

Bulgogi is believed to have originated during the Goguryeo era (37 BC–668 AD) when it was originally called maekjeok (맥적), with beef being grilled on a skewer. It was called neobiani (너비아니), meaning "thinly spread" meat, in the Joseon Dynasty and was traditionally prepared especially for the wealthy and the nobility class.
Before cooking Bulgogi, the meat is marinated to enhance its flavour and tenderness with a mixture of soy sauce, sugar, sesame oil, garlic, pepper and other ingredients such as scallions, onions or mushrooms, especially white button mushrooms or shiitake. Sometimes, cellophane noodles are added to the dish, which varies by region and specific recipe.

Bulgogi is traditionally grilled, but pan-cooking is common as well. Whole cloves of garlic, sliced onions and chopped green peppers are often grilled or fried with the meat.This dish is sometimes served with a side of lettuce or other leafy vegetable, which is used to wrap a slice of cooked meat, often along with a dab of ssamjang, or other side dishes, and then eaten as a whole.

And just for fun - I'm not doing the numbers on it either.. (nanny nanny boo boo).
 :D  This is actually a VERY NEW Disney World (more detailed Animal Kingdom/Asia) drink so finding the actual nutrition info on it I have not.. but whatevs.  Woo.. I'll have to play some Disney music!

So, I was going to do this veganization on Saturday - but it turns out that Saturday is national vegan pizza day - so the girl and I are going to celebrate with her vegan version of Dewey's Green Lantern and I'm going to make a cherry pie pizza - so that means this one has to move up to Friday!

So my darling dear and I will enjoy vegogi and end up being two happy tipsy ducks in love after our veganization - in a hot house.  A hot house! (It's supposed to be 102!  I guess I'd better pull out the window AC).

Keep it tuned here - we'll either die of heat-stroke or we'll die of eat-stroke.

Green Pasta and Pesto and yum! Recipe 28

And there it is.

This was another super-easy veganization. I started on the noodles on Saturday morning. I found it most difficult for some reason to roll them out as thin as I did and then try and cut them by hand, so I went to the trusty noodle cutter and did it that way.. so not a complete fail, however I do not know why gadget companies feel the need to create everything for right handed folks. It's troubling that everything I do aside from write or put on makeup I do with my right hand. It was pretty much forced upon me. I digress, the noodle cutter is a pain, and if I could have without ripping them to shreds, i would have used my hands.. but whatever. Moving on.

I intended as well for the noodles to be green.. (considering we're in 'green' month) so I utilized a liquid made from solely spinach and water.
you WOULD HAVE THOUGHT this would have made them green. But noooooo, no no. They turned out still, whole wheat brown.
Whatever.

Anyway, after that was done, I got myself through a yoga workout, and then off to see the girlfriend.. who rocked an awesome "un-chicken" fried tempeh, and accompanied it with mashed potatoes, veggie gravy and green beans.

I have found my foodie equal, however she's a carnie and cooks better vegan than I do!  Not only is that special, she's learning this for lil ol me!! <3

Ok.. :P

Anyway.. the next day was the veganization.

Sunday.

I was in a brilliant mood, until SOMEBODY felt the need to call me three times and then lie about doing so out of the blue.
Whatever.. it did however knock my mood down considerably.
However, my evening was to be spent doing yoga with the girl and feeding her vegan pesto with my home-made pasta.

Although I put too much salt in the pesto - it was still omg yum, and the noodles actually turned out perfectly, despite how I thought they would.
I'm sold on pesto.. and I'm about to have myself the leftovers for dinner here.. (because there's like a tablespoon and a half left).

So, my victim loved her pasta and pesto - however, went back for more salad (because i'm an awesome salad maker.. not as awesome as bff, but i come a close second.) I went back for more pesto (considering i'm an empty container even when it's filled).

So, what's next?!
Something I've wanted to super-veganize for a while.
Something a hungry southern bear would eat...

SUPER Vegan Cincinnati Chili, Chili 'Cheese' Dip & Coneys!

It was a beautiful night for a party.. a SUPER bowl party.  I put on my 'Super Duper Girl' shirt and celebrated with some awesome ladies for this first ever Super Bowl that I've actually sat down for. (Not a sports fan).   We started with some Kundalini yoga.. (which Robyn affectionately called 'Tandalooni'..lol)  And then we busted out the food.   We had fruit, we had veggies, we had chips, chili 'cheese' dip, and the ever Cincy popular 3 ways and coneys.   
You'd have thought I worked hard on this little dinner.. but it was probably one of the easiest - complicated dishes I have made.   Everything was super simple, and kid pleasers.. and kids we pleased.. (and adults too!)

I started this baby old skool.. (I do this from time to time)... the main stuff?  Garlic, onions (omg they burned my eyesesballs!) and tomatoes.. plus all kindsa spices.. like, ALL KINDS OF SPICES and a few other things..   a couple of hours, later you have 'voila' vegan cincinnati style chili... which has been a hit so far with everyone who's eaten it.  (Even myself and I'm not a gargantuan cincy-style chili fan, but I do like this stuff.. and so does my clueless daddy. Did I mention that yet?  Oh yeah I think I did. 

Wanna see it cookin?  I sat in my kitchen last night for two hours smelling it cook it's lil heart away. mmmmm

Alrighty then.. let's get to the night.  I was told I was supposed to root for the Giants..(and they won). But the house was rooting for the patriots.   We were all rooting for Madonna though,secretly. :)  Isn't she beautiful? I luff  her, have for YEARS.
Anyhoo...aside from our dancing in Robyn's living room,  lets   enjoy some shots from the night. :)

To close, I had a BLAST.   We laughed, we danced, we did yoga, we discussed people, places, things.   I can't wait for the next time we get together again.
The veganization was a success.. I have two chili converts here.  mmmm.  :)

;)   Yes, I'm going to celebrate this Hallmark holiday with some sweets for my sweetests!  And you'll just have to wait until later this week to find out what I'm doing.

It's the Bowl of Super Vegan Cincinnati Style Chili.. :)

Oh, I can feel my arteries harden, I can feel the button on my jeans bust, i can only imagine what a hot dog is made of, and for that, what you see to your left is NOT what you'll be getting this weekend during the Super Bowl, or WILL YOU?  ;)

So, what you're seeing to your left is a coney and a three way - a true dollup of Cincinnati.. our world famous 'Skyline Chili'.   And here, folks, is what Wikipedia says about the gem 'food' of our area:


"Skyline Chili is a chain of chili restaurants based in Cincinnati, Ohio. Founded in 1949 by Greek immigrant Nicholas Lambrinides, Skyline Chili is named for the view of Cincinnati's skyline that Lambrinides could see from his first restaurant (which has since been demolished), opened in the section of town now known as Price Hill. It is also the "official chili" of many local professional sports teams and venues, including the Cincinnati Reds, Columbus Blue Jackets and the Kings Island theme park,[2] and also sponsors the Crosstown Shootout, an annual men's college basketball rivalry game between the city's two NCAA Division I teams, Cincinnati and Xavier.



History

In 1912, Nicholas Lambrinides immigrated to Cincinnati from Kastoria, Greece, and brought his favorite family recipes with him. To save up the money to bring his wife to America as well, he first worked as a cook for a railroad crew and in a hotel kitchen, then opened a short-order diner. After nearly a decade, his wife was able to join him in Cincinnati and they raised five sons.
By World War II, Lambrinides was working as a chef for the original Empress Chili restaurant, where he continued to tinker with a recipe which he had been developing for years. In 1949, he and three of his sons opened their own place on Glenway Avenue, near the top of a steep hill (Price's or Price Hill). That diner was located at the intersection of what is now Quebec and Glenway Avenue. The owners named it Skyline Chili for its panoramic view of downtown Cincinnati. After some local resistance in the predominantly Roman Catholic neighborhood,[citation needed] Skyline developed a large and devoted following – especially on Thursdays and Saturdays, which immediately preceded and proceeded meatless Fridays.
The family opened a second restaurant in 1953 and the growth of the business accelerated in the 1960s; by the end of the century, there were 110 Skyline restaurants, mostly in Ohio, but with additional establishments in other states including Kentucky, Indiana, and Florida. Lambrinides died in 1962 at the age of 82, but his sons continued to operate and expand the company. They retained the original recipe unchanged, though. According to William Lambrinides, "Dad always said, 'Don't change a thing with the recipe – don't add anything, don't take out anything, it's perfect the way it is'." As a result, Skyline's version has largely become synonymous with "Cincinnati-style chili". In 1998, the company was sold to Fleet Equity Partners, a New England investment firm, which promised not to change the recipe (which they reportedly keep locked in a safe)."

Now, if you are NOT a Cincinnatian, you'd not understand that people go BALLISTIC over this stuff.   It's a bit nuts.   I myself have indulged in a 3 way or two.  (Minds out of the gutter, people!!  This is CHILI).
Regardless, I'm about to veganize (for the third time) the recipe that even my daddy (who is a Skyline FREAK) still does not know wasn't the real thing, for a Super Bowl party that I have been invited to!
Here's where those of you that know me say:  "You were invited to a who,wha, yr kidding right? You're going?"
Ah, sports fan I am not.. but when my victims suggested to me we super healthize (is that a word?) this national past-time with a healthy menu, (along with some Kundalini yoga - oh yes, I'm about to convert again!) How could I say no?    All I know about this day is that I'm apparently supposed to be rooting for New York.   Also something about ribbons.     (Thank you Patsy Cline.. <that's the bestie, not the singer>).

But now is the time we all wait for.. the NUMBERS!  And shoot - this one's gotta have a new name..  (and keep in mind I'm making not one, not two, but THREE items from the original skyline menu!)

So,  with that, my cohorts, 2 small children and I will be celebrating the Super Bowl, with Super Bowls of Vegan Chili, Coneys  and a big ol' dessert of fruit and some salad.   Who are we rooting for?   It looks like the teams are The Patriots and The Giants.. and I'm under the assumption that my Patricia Ann Cline is making me a Giants fan for this veganization.  So I'll do her proud since she's going to be in New York and I'm here.  Ribbons and all. ;)

Honestly.. I think we're only in it for the Puppy Bowl and the commercials.

..And that's a wrap! Recipe 24, Swayze's Crunchy Vegan Chicken

Yesterday was my birthday, and a beautiful day all around.  You might wonder why I chose to do a veganization on my birthday?  Well I don't have an answer to that.  Regardless, allow me to tell you all about it.

It was a bright blue day.. and warm, extremely warm for January.  Considering when I was a kid, my parties used to be canceled by blizzards, this one we had a thunderstorm!  No worries!   I started my day making creole sauce for the crunchy chicken for dinner.  I found the original recipe from Planet Hollywood online and very carefully veganized it minus a couple of ingredients (which were not noticeable at all!  Seems it's really hard to find vegan horseradish, but I don't like horseradish anyway, so it wasn't missed).

So, after that I had a whole day I had to fill.  I didn't want to make the chicken until right up to the time I had to leave for Christy's house.   

Now, remember, Christy was the one we discussed on the previous blog, the story about how she and I were trying to eat Cap'n Crunch chicken while Mickey Mouse and Patrick Swayze (rip) were in the house? 
However, we've met Christy and lil Elena before, so they're not new to us.   Regardless, I had to wait til school and work was over for them, so I ended up spending the afternoon at Frisch's and 'The Candy Bar'.   Whoohah.  I did have fun though.  
I do want to shout out to everyone who made my birthday spectacular starting with Friday and ending out to last night.  My baby mama, my baby, my family, the lady at the spa who put me in a state of bliss I might never be in again, AK, my kids, and of course Christy and Elena!   

So, when it was time, I started making the ol' cap'n crunch chicken, which we've dedicated specifically to Swayze.  And here was the setup!
Once this baybee was done, it didn't take long at all.. this is much like the setup for fried chicken.
The end result was oh-so-delicious. 
I like to remind my victims that most of the time that I'm trying these dishes for the very first time too - and this was one that I was a virgin to til last night.  It was cute, Elena even asked for MORE.   However, we were piggy and ate it all. But Christy did keep the creole sauce.  :)   

So, remember I told you about how we came to eat the original Cap'n Crunch Chicken at Planet Hollywood in Downtown Disney?  Well, to end my Disney veganizations, I decided that instead of v-logging the veganization,  I would v-log what happened to Christy and I that night.. So, without further ado - you'll laugh, you'll cry, you'll want it to stop!

Whooo loves me?  :)  I love owls (If you don't know this already)  and I have the most lovely Mary Beth King (owner of the fantabulous - Sweet Peace Bakery to thank for this absolutely yummyfied cake goodness!   Is it not one of the cutest things you ever did see?  And Christy wanted to get the whole birthday song and presentation on video, so you not only get our veganization on video tonight, you get the birthday video as well... are you not the most lucky people in the world?  (You'd have been luckier to have had vegan cake with us!)

So here's that video too!


All in all this is another successful veganization.. and the end of our Disney veganization trek.  This is NOT to say we won't revisit Disney again (remember I'm obsessed).   But for now, it's back down to earth (you know how that happens after vacation).

Hollywood is a planet.. Recipe 24. My brush with fame.

Sometimes I like to think I'm famous.   After all, was it a friend of mine around Christmastime who said to another.. "Sheri's a celebrity blogger now!" ?  Ah. Hahaha.  I've got a ways to go before I'm a celebrity like say - Hanna Harto or anything.. (gathumpa).  But I'm on my way!

As such, I want to recount with you, my dear readers the brush with fame that my bestie Christy and I had at Planet Hollywood - some year when we were both much younger and stupider...  a brush with fame we had no clue was even coming!   This brush was a super surprise to us (and I'm sure everyone in line knew it too... but us?  Shoot, we were hungry, we had no clue.)

First of all, let me introduce you to our last trek through Disney ground for our veganizations... Downtown Disney.   Specifically, "Planet Hollywood."  Let's see what Disney.com has to say about Planet Hollywood:

"Planet Hollywood satisfies cravings for traditional American lunch and dinner fare in a star-centric restaurant in Downtown Disney West Side. Menu selections include a variety of filling fare that features BBQ sandwiches, New York Strip Steak and spaghetti with pomodoro sauce.
The three levels of Planet Hollywood are densely decorated with movie memorabilia and props from some of Hollywood's hottest films and TV shows. Stargaze at the displays while you dine under the iconic planetarium-like ceiling. Well, ok, that's about right.  :)  Notice, it's not very vegan friendly eh?   That is OKAY.. because we're not really GOING there.. but we're sure going to talk about it!    Let's start from the beginning.
So, Christy and I decided we were hungry.. and at this point we were not ravenous or anything.. uh, HEY LOOK!

Ok, anyway we decided upon Planet Hollywood.. (mind you this was YEARS ago, I was a carnivore).    We were excited.. we knew there'd be a wait.. but 2 hours walking up and standing on stairs.. we had no clue that would be our evening.  We went from mediocre hungry to ravenous.. but we enjoyed a few sights along the way.   All I can say for us is that we must have been just sure we didn't want anything else because for the life of me now, I can't imagine why we stood in line for two hours.. but we did.

I digress.. 2 hours passed and we were seated... we were seated upstairs in a balcony section, overlooking the stage where I spose people perform here and there.   We ordered.. we ordered 'Cap'n Crunch Chicken'.. (which was good by the way, and it's what is going to be veganized).   So we sit, we chat, we get our food.. it's good, we talk about how crazy we were to stand in a line for two hours, we discuss how the puffy vegetable colored things under the chicken taste like air.. and then

Not to be overshadowed by the other guy that was there... Mr. Orry Main himself..  Patrick Swayze!

Ok, so what was funny is that while we were chanting for Mickey, Patrick is getting the brunt of the action - but mind you, we're in primo spotto here.. how we did this is beyond me.. we had no IDEA Swayze was making an appearance.  What was NOT funny was that because we're in primo spotto.. we have the most obnoxious women LAYING over our Cap'n Crunch Chicken, making fools of themselves trying to get Swayze's attention.     I'm sure Christy said some choice things to them.. as I was trying to shoot pics of Mickey mouse.   But seriously folks.. we could have not timed this any better with a better spot had we known.  Aside from Ob and Noxious over our food.. we had a blast and talked about it (still do) years later.  So what a better thing to do than to try and re-create the food from our brush with fame?

So, that's what's going to happen.. Cap'n Crunch Chicken from Planet Hollywood, will be forever engrained to us as "Swayze's Crunchy Vegan Chicken" (RIP Orry)  and who better to victimize this with than the one girl who shared this experience with me?  That's right.. the salad maker extraordinaire and her baby girl.. Christy and Elena!

Recipe 22 - Cat Mama's Vegan Pot Roast... Disney Style!

I was actually surprised at how easy this was to make, and really how yummy it was!
I always enjoy veganizing for my baby-mama.  She was the first person I ever started veganizing for, so it's a joy when I get to do it again.   The leftovers stayed at her house. ;)

First of all, I like the plate.  I kinda like the theme in a way.  I was wearing my Disney Villains wicked queen apron.  It said "Queen's Poisons"  However, poisons was x'd out and said "Recipes".  So along that same vein we kinda went the scary route with the plates.  Which, it's all fitting, because the place I veganized this from is at the Disney Studios, and the Disney Studios house some of the best 'villain' stuff in all of the WDW resort.. so YAY!   Also, although not a complete villain in his own right - I was wearing a Mr. Jack Sparrow shirt.. so still, the skull and crossbones worked all the way!

I started this veganization in my kitchen, creating the 'pot roast' and the simmering liquid..
To your right folks, is how vegan potroast is born.  Not in a barn where it's ripped away from it's mother.. nope.  It's born in a bowl with spices and liquids.  :)
Then after it gets mixed up, it's seared on all sides and then put into a pot of broth with a BUNCH of veggies to simmer for several hours until it starts smelling so heavenly you have to at least try it's broth.



So... my kitchen was smelling goood allllllllllllll day.  And after a few hours I was ready to leave with it.   However, on the way there was an AHCKSIDENT!  (OH NOES)

Sooo.   On my way up Glenway ave.. some moron SLAMS on his breaks (no one in front of him)  causing me to SLAM on mine, and crock pot goes flying.. (at least I saved the pot roast) but (thank god baby-mama is vegan)  I had to doctor up my broth and cook it a bit longer when I got to my destination.     So upon getting there, we doctored that up, and my baby Lotus and I started on our mashed potatoes.    As everything cooked, we discussed gadgets and gizmo's a plenty.. whozits and whatsits galore.  (Did you know she's got 20 thingamobobs?)  Not only that she treated us to a dance routine with the Beastie Boys 'Girls' playing in the background.
So, when it was time, I had to create out 'gravy' which turned out even better than I thought.. (from the veggies and broth.)   Yup - there's me!

I put that goodness in my lil bullet blender with a hint of cornstarch and it turned into the best golden/brown gravy I've ever seen!
At this point, our potatoes were ready to mash up.   I know Lotus would have loved to help with that, but it was waaaay too hot for her, and besides I already had a very important job for her to finish up with our dishes.. and of course in true 2012 Rainbows of Vegan Love tradition, I got it on video (thanks to my baby mama) and you're about to get the chance to watch my Lotus and I at work creating what turned out to be an EXTREMELY yummy Saturday night dinner and a very successful veganization for this week.   So, without further ado - let me present to you  - Lotus Young Stigar and Sheri Fuqua in the kitchen, plating our first 'Cat Mama's Vegan Pot Roast'.  Please.. enjoy!





So, with that veganization under my belt, I'm about to get ready to travel over to my sisters house and enjoy and hour of Kundalini with her and make her mouth water with the next veganization I'm going to do.
We've traveled to all of the WDW parks.. where are we about to go now?
Well - I've heard about a place there where "O'hana means family, and family means no one get left behind"... and since MY O'hana has been asking for me to make this recipe for some time now - their wish is about to be granted... because a dream is a wish your heart makes and all. ;)

Let's go back in time. Recipe 22 - Cat Mama's Vegan Pot Roast

There's a place at WDW, specifically at the Disney Studios, that I have always made a reservation to go to when I've been there.  Mind you, they're not vegan friendly, so I may have to just go there and watch the funny happen around me while I enjoy a drink next time.. but even so, it's still one of my most favorite places ever.

And what does Disney.com have to say about this very special place?

50's Prime Time Café serves classic American comfort food in a TV-themed setting. The restaurant sits across from Echo Lake in Disney's Hollywood Studios theme park.
The 50's Prime Time Café menu includes family favorites like golden fried chicken, traditional meatloaf and pot roast, cooked the way Mom used to make it—that is, if Mom were a 1950s sitcom star.
Be welcomed into Mom's family and feel at home in her kitchenette. But Mom expects you to mind your manners, so don't be surprised if she tells you to keep your elbows off the table. It's all part of the old-fashioned fun and gentle ribbing that's served up along with the food.
TV Tables and Tune-In Lounge
For a special treat at 50's Prime Time Café, grab a "TV Table" that seats up to 4 diners and has a television next to the table that broadcasts clips from popular prime time sitcoms circa 1955 including "Father Knows Best" and the original "Mickey Mouse Club."
Bop into 50's Prime Time Café for lunch or dinner. Cocktails, wines by the glass and frosty beers are available from Mom for Guests 21 years of age and older, or relax in the Tune-In Lounge full-service bar and sip Dad's Electric Lemonade or Grandma's Picnic Punch.
From the mid-50s knick-knacks and memorabilia that decorate this restaurant to the dessert menu displayed through viewfinder toys, nostalgia is the main ingredient at 50's Prime Time Café.

Love it!  What is even more awesome are your aunts and uncles and cousins you never even knew you had that drive you batty during your whole dining experience!  One time we went, my cousin Fred stole my Jack Sparrow poster and ran around Dads lounge with it until my Aunt Kimmie stopped him and gave it back.
Another time we were there, Aunt Jane made my mom stand in the corner because she didn't eat all her vegetables.
Another time, I actually got the 'clean plate award' and a free dessert for finishing all my food like a good girl.    Also, you canNOT talk back to your server/cousin/aunt/uncle.. you'll be sorry if you do.  LOL.

Now, I'm not sure I can put on the show these people do with my next veganization..but I can certainly try as I serve it to my baby mama and my babies.   It might actually be quite fun!  But what recipe off this awesome menu am I going to attempt?   Possibly the hardest!

So my goal is to make the vegan version look VERY MUCH like that.. and taste ALMOST just as close!
But we need numbers now, don't we!?!

So, I'm serving this to a true vegan, a vegetarian and two carnivores,  (one of them I expect to give me his real opinion on pot roast.)  I've prepped, I'm going through my recipes.. I know what I'm about to do and I am READY!
Now, I just have to get my parental attitude in check.  I think I can do that!   V-log?  Maybe, if I can get my tripod to work the way it's supposed to.  If not, I'll get my baby mama to video tape me being a stern auntie to my non-blood children while serving them.
I'm excited so let's BRING IT ON!
