The Christmas Veganization of Gastronomical Proportions

I'm exhausted, ya'll.   Absolutely exhausted.   Why?   Well it's not because I've been up all night with an ulcer.. oh NOOOES.

Yesterday started out somewhat irritatingly but I didn't think much of it really.  I thought it might have been because I wasn't sure how I wanted my black bean burger cooked at the place I went to with my girls on Friday night.  (Ok REALLY?  Who asks you how you want your black bean burger cooked? It's a BLACK BEAN BURGER.. not a cow!)  Anyway.. I thought maybe somethin was up with what I ate there.. til later on, as I'm starving and wanting dinner.. but then, dinner didn't want to be in me at all. :(   The PAIN in my stomach was, and has been intense ever since.  It's an ulcer.. it's been confirmed.  It's awesome.  I got to spend the gest of the day on pillows and with a heating pad on my belly.   Regardless, even though I was in pain, I prepped my cinnamon rolls and biscuits last night.. and was able to create a vegan plate worthy of any Christmas breakfast today.

In no particular order, I made cinnamon rolls.  
They turned out small.  The reason I think this happened was because I rushed making the dough last night because it was hard to stand up.   They were cute though and tasted really good.  They have a sugary vegan cream cheese icing on top of them.  They certainly were best much warmer, but they were the first things to be popped in the oven and I think the last things to be eaten.  Regardless, I'll make them again, but I will make them alot bigger next time.

You only see two biscuits there because it was only my sister and I eating them.   I was impressed.. my sister took leftovers of this home and said it was 'really good'!   Honestly, if you're an avid biscuits and gravy eater, it's really hard to tell that this isn't the real thing.  It's one of my favorite breakfasty things to make.. it's very yummy!

I like the lil spoony thing.  lol.   Obviously my 'eggs' were tofu.  I hate using alot of tofu, but I wanted to try some 'eggs' with the rest of my food today.  Tofu, some veggies, and top with Daiya and it hit the spot (albeit the wrong spot as my tummy isn't wanting me to eat today).   It made a nice colorful section on my plate. In fact, had I been really testing myself, I'd have made them 'Huevos Rancheros' and thrown some hot sauce on them.. but that would have just been evil!

I actually took a big shortcut here, but not before I did that thing I'm terrified to do and..   PEEL the dang potatoes.   (Shudder)...  AAAAHHH.  
Ok, anyway - I'd brought my cheese grater to moms to shred these potatoes and make them look more hash browny.  Oh trust me, because they look more like scalloped potatoes (thanks to my moms food processor shredder) my father let me know a couple of times what hash browns are SUPPOSED to look like.    Whatever, he ate them. ;)  Look that's him dishing some out!

Anyway, I hope everyone had a good holiday, whatever holiday you might celebrate!   I had a whole plate of food.   However, about 15 mins later I had to take a really good pain pill and sit on the floor with a heating pad and about a dozen fluffy pillows to open my Christmas presents due to the pain.  At least I was good enough to play a TOTALLY fun game of Disneyland Kinect with my neicage later on, and to get a Kundalini workout in with my sister.

My Christmas dinner?  Soda water and crackers. 
Yay.

It's beginning to look alot like _______. (Insert holiday there!)

So,
While my family celebrates something that looks a little like that photo to your left, I'm sure there are some of you that celebrate other holidays!
I COULD list them all here.. but there are actually quite a few holidays to list, and that's really a pain in my butt, so I'm not going there.   Regardless, whatever holiday you celebrate, have a great one!

Now, as for me?  This usually means I'm going to have breakfast with the family people.  But I've got a rather long list of what I'm eating here so I'm going to start on the 'breads' on Saturday.  And work my way into the rest on Sunday (aka Christmas day).  Some of you might ask.."are you staying the night with your family!?" To which I'd add.. "Yes!"  But what "I" mean is my lil at home family.  My kiddos and I.   After all, we're putting vegan cookies and flax milk out for santa and leaving him some water and carrots for the reindeer.. all good kitties shall be up in bed with me by midnight or Santa will not put anything in our stockings!  (And yes - we've got stockings!  The proof, look to your right.)

So, that being said.. once I'm done prepping breads (they'll bake at the parents house the next morning) on Saturday night, the kids and I will do what we always do.  Cuddle up, watch Rudolph again, put out our snacks for santa and deer, then head to bed.  When we get up in the morning, we'll have goodies in our stocking and something to open.  At that point I'll log some miles and head out to the parents house with my ingredients to get a head-start on the oven before the neicage-weisage needs it for her muffins.

That's about the size of this one.   (Not to mention my size later on in the day of course.)  I think we'll have fun with this one.  I've never made cinnamon rolls before so this is a new one to me.   The recipe I have calls for ... er, maybe I shouldn't tell you.  Nah, I will keep it a secret. ;)
It looks like I might be on a sugar high again.  Maybe I'd better add a mile to my morning!  Ack!

Regardless, I'm going to start on this on Christmas Eve.   So you'd better watch out, you'd better not cry, you'd better not pout I'm telling you why.

Of Eggs and Mr. Benedict - or Recipe four - The Vegan T-Rex Split - Brunch/Breakfast

Ok,
So I started the process of the vegan T-Rex Split yesterday (which was Saturday)  I have been feeling really under the weather lately but I still have to press on.   My Saturday was insane.  I got finished all the stuff I had to get finished, almost got lanblasted by a brown recluse who was just trying to live her life, and treated myself to a home-made seaweed wrap... but in the middle of all of that I made english muffins.
For some reason in my lil brain, I didn't think making of an english muffin was even possible.. but I did it, and wow are they ever easy and yummified!
Just like every other bread I've made during this blog, I had to knead like crazy.   I want you all to see what a bread makers muscles look like:

Ok, well I lift some too.. but I'm telling you (ignore Pippen there in the background)  kneading has probably given me huge workouts.
I digress.. the birth of a english muffin is an amazing thing.  It starts as dough, then goes into a big puff of dough, then it goes into little balls which pat down into flat little pancake-like pieces which you then throw into a skillet.

Now keep in mind they're not perfect like the kind you are going to find in the grocery store.. but once these little puffs of love have been sitting in the skillet for their allotted amount of time then let out to cool..  I'm telling you - I don't think I'll ever go back to eat another store bought english muffin ever again.   These are so good..  and made 12 muffins.. I'm going to be eating english muffins for a while... but even so - look at the beautifous muffins that are sitting here on this plate:

Anyway - now to the whole kit and caboodle.. the vegan t-rex split.. also known as vegan eggs benedict.
Here's how the whole thing took place, this Sunday morning in my kitchen after my four mile.
Shall we?

So, I've completed my four mile.. I've completed my Kundalini practice.  I've EVEN completed my sisters under-eye cream she asked for!   (and laundry and a few other things.. I'm on a role)   I wanted to get this as close to noon as I could make it.. This is calories enough for two meals so skipping lunch or making it 'brunch' is a good idea in my head.    Anyhoo.. I got the ol tofu ready.  (now, this recipe is FILLED with soy, group.  So, if you have an issue at all with soy - you may wanna skip it.)  Otherwise, make sure you get the non GMO stuff.. seriously.  If you are health conscious at all.
Got it ready - the recipe suggest four pieces of the tofu block... which made this kind of a 'big' egg.  Lol, but I did it. Cut them up, and made my 'cheese' sauce which would also be considered the yolk of the 'egg'...  without possible baby chickie ever to be born from it.

So.. the cheese sauce was easy peasy.. and then - wait for it.. I get to use my flavor injector!   My ex wife and I got a flavor injector EONS ago - I guess I assumed I was going to be a flavor injecting fool.  I can only recall using it for vegan hostess cupcakes at the time.. if that.  Maybe I didn't?  I don't know.  All I know was that I was about to get rid of that flavor injector for taking up space back when I was cleaning out my cabinets.   I'm glad I didn't, because it came in handy!  So I injected these raw pieces of tofu, full of "yolk".   Then popped them in the oven!
While they were baking I put together the rest of my sandwich.  Home made english muffin on the bottom, a piece of Ives veggie canadian bacon on each half, followed by a quarter of an avocado, spinach and a tomato.  Then got to work on my hollandaise sauce.  Mmmm.. super duper easy peasy too!   As I waited, I created myself a virgin mimosa to enjoy with my brunch in my trusty EPCOT food and wine festival wine glass from the year 2001 I do believe. (Was a gift.. I've unfortunately never been the the fwf.)   Then - the chicken timer goes off.. my 'eggs' are ready.   I plop those babies down onto their sanwich topper and pour on the hollandaise... mmmmmm... I'm ready for this, I just 4 miled off a bunch of calories for this - BRING IT ON!

Ok, so gimme a break.. I had time to do everything but make myself look like Donna Reed to pose for a picture.. be lucky I'm making my un-makeuped self available to the general public, and most of you know me!  Only a few of you have seen me w/o makeup and my hair just so!  Anyway - I digress.  It was yummy.  If I had to do it all over again though I'd slice the tofu much thinner.. it looks like I'm about to enjoy a big mac or something with those big ol' squares sitting atop all of that other magic!
Well though - since I cooked for myself this time.. did I like it?  Would I suggest it to you my dear friends?

So, now that this week is done - as I sit here and watch another weekend go by and it's barely even noon.   I'm enjoying blogging about this in my skychair on my deck.  It's gorgeous outside.  I'm sure something will come my way today to do.  I have no other plans.  I may sit here for a while.   Next week I'll be making a vegan cheesecake with a peanut butter crust for my sister - as we'll be celebrating her 39th on Monday (she's really a Sept. 22 baby, but since we get together to run on Mondays she's getting it then!)  She suggested a 'cheesecake' so that is what she's getting.  :)
