Recipe 46 - Creamsicle Cupcakes

Of all the interesting things in the world... I'm about to try my hand at rootbeer cupcakes too, but one thing at a time.

A staple of my childhood summers was a frozen creamsicle treat whenever we got out of the pool or a hard afternoon of bike riding.   Yum..  So, I decided to attempt this in a cupcake.  What better thing for a summer treat that won't melt all over you?

I made these for the Scheben family when I first met them.   I do believe the cupcakes and I were accepted happily.

Let's look at some stuff on the creamsicle.

"Creamsicle is a brand name for a different frozen dessert also owned by Unilever. On a flat wooden stick, it is made as a single flat bar with a rounded end. The center is vanilla ice cream, covered by a layer of flavored ice. Creamsicle flavors include orange, blue raspberry, lime, grape and cherry. They are available in several varieties, including 100 Calorie Bars, Low Fat Bars, No Sugar Added Bars, and Sugar Free Bars. 50-50 bar is an alternative name for a Creamsicle.  Today, the Dreamsicle, whose center is ice milk, is much more common than the Creamsicle.
In the United States, August 14 has been named as National Creamsicle Day."

I do want to say that my first attempt at these cupcakes were a big old fail.   But I realized that the problem was not so much the fact that I happened to be missing a couple things I really needed (however I'm the queen of throwing something different in to complete the task if needbe).  But the amount of orange flavor in the recipe was enough to make someone ill for weeks.

I threw that group down the trash hatch.   I hope it didn't make some wild animal sick!

So, suffice it to say I made a second batch with my favorite 'buttercream' icing and they were sooo yummy.  "Tastes like a creamsicle" daddy Scheben said.  :)

My last 'summer cookout favorites' veganizations for the year.    And I'm about to get ready to go to a jewelry party and give them my famous banana bread muffins that I baked this morning.  So, that means I need to get my hair fixed, my makeup on and my cork wedges on and mosey on out of here.

The next one?  Well, I think we might need to play a game of Quidditch to burn off the calories from it!
