Recipe 33 - Sweet Agave Easter "Vham".

So, let's talk about this for a moment.   For some reason everyone wants to run to that said 'honey'd ham' store and buy themselves pounds full of this

Until it was reduced to this (and other horrifying images I'll make us do without):



To make the gluttonous stuff we call 'ham' from it's backside.
People, it's a cold cold world.

But guess what?   It doesn't have to be!!!

Let's step back in time, shall we?  To Easter 2011 at the Hoffman estate - (aka ex girlfriend's family) and see just how well-recieved a VEGAN easter ham was!

Let's start with the numbers on this baby:

So in the WW world these two match.  Let's see how well the cruetly free ham matches up to it's evil counterpart.  (yeah I said evil).

I started with everyone's favorite - the prep of the seitan, which is the 'meat' of the 'ham'.   This is actually quite easy.. it's when you have to pull it apart to make it look like a burger is when it's a pain in the 'ham'.
(I even made crosswise marks on it!)



Once that was prepared, I simmered a yummy blend of tomatoes and spices in a pot and put that pretty non piggie into it and let it simmer - for quite some time.   Seitan takes to flavor much easier when it's boiling in the flavor rather than just soaking.


When it was time to take it out - i let it dry and concocted my sweet agave mix to drizzle on top of it to harden and crystallize (not as much) but much like honey would do in air.



Voila, finished 'ham'.
And it's good cold and hot!
So - now you know I liked it... but it was a little harder to convince the Hoffmans that they wanted some.  (why are you meat eaters so hard to convince?)

I had two victims, plus two,  (that makes four - thank you for learning me on counting, preschool).   Three were not extremely willing, but took a bite and were pleasantly surprised.  (These were avid meat eaters - the type that say to a vegan "well, where do you get your protien?!!")   The 'plus one' was the ex.. and she's not really one to mince words if she doesn't like things (she doesn't like alot of things - one of those things was me.) But she actually liked this.   I gave her the leftovers - it was gone in a week thanks to her and her step momma.

So, I like to consider this veganization (although a year old) a successful one, and one that warrants doing again for a holiday - or heck, just if you're craving a ham sandwich!

Happy New Year - Recipes 20 - Vegan Disney Inspired New Year Drinks!

I know, it's what you're all waiting for..

But before I get to the nitty gritty.. let me bring you into the basic idea.

My goal - to make 2 Disney inspired drinks for the New Year.   #1 - The Disney Dole Whip.  Created originally for Adventureland, exclusively in the Magic Kingdoms of Disney parks.  The Dole whip is basically pineapple flavored ice cream, with a splash of pineapple juice.   The vegan version, I'm proud to say - tasted just like the actual Dole whip.  The only difference is that I don't have one of those fancy soft serve ice cream machines to make it look like the real thing.. so I had to improvise with a plastic bag.  No matter.. it was still yummy.

The scene:  Well, it was SUPPOSED to be happy children tweeting around like birds.. but this is what happens when you don't get a chance to prep a child ahead of time.  It's OK.. it would have been easier with one child.  We apparantly had a miscommunication in the lil girl world that these stuffed birds were Elena's birds, in HER room.  Lol, which created a bit of a grump for a slight moment on Elena's part.. which I completely understand (been there done that, I was probably her age!)  It's ok, she very sweetly (off camera) apologized to me.  Even though I didn't need an apology, she's a good girl though. :).   We still all had fun.    What did we learn from this first V-log?  Kids need preparation.  Which I knew already - but as I've said, it's harder to prep two kids then it is one especially when we go to a V-log as soon as everyone gets there.  So we lived and learned through this one.  It was cute though.  Very cute.  I'm not going to edit.. because I think you'll giggle at the hard-core REALness of this video.    So I present to you - how fun it is to use children who've got no clue what it is they're actually supposed to do, while you try to keep it together in a kitchen which isn't your own. )  Hehe.  I asked for this one.   I love it though!

So, while the girls were supposed to be watching 'Tangled' (I'll have you know it was the ADULT girls who finished out the movie!)  I prepped the 'yeti eyes' for the next drink.  The premise to the next drink was to veganize the "Expedition Everest" drink, made for the ride of the same name at Disney's Animal Kingdom in Florida.   What makes this drink un-vegan is the MASS of whipped cream on top - recreating the 'snowy mountain'.  Now, I've never had an EE to compare it to our 'Happy New Yeti's' but I must say, this drink was rather tasty!  Not only that, it was easy to make, and this time we had several happy girls in the room. (It's this point where we were wondering if Mr Jason - who also tried our drinks - was re-thinking his plans to go out for the New Year rather than stay in with a bunch of giggly girls.. hehe).   Everyone got in on this.. even our token Yeti! (who now has a home on my refrigerator.)  I'll have you know - only two of these were 'virgin vegan new yeti's'  I am not sure {Christy} who's idea {Christy} it was to unvirginize {Christy} these drinks.. but after we made the two for the girls, out popped the vodka (and you'll get a kick out of how proud Elena was when talking about the Vodka bottle at the store - make sure you listen for it).   This was a fun one.   Also, notice how versed my lil Elena bug is in being a vegan..  I'm telling you - she's going to be one before too long!  Even Amerie got into the vegan mix, with her little blurb on kittens! (Such smart lil ones!)
So, I present to you - the veganization of the EE - or our version - The 'Happy New Yeti!'

All in all, we had a BLAST!  The girls stayed up til a lil past midnight and I couldn't have asked for a more energizing night or veganization.
I've now proudly victimized two new victims in our un-celebrity chefdom!

The Christmas Veganization of Gastronomical Proportions

I'm exhausted, ya'll.   Absolutely exhausted.   Why?   Well it's not because I've been up all night with an ulcer.. oh NOOOES.

Yesterday started out somewhat irritatingly but I didn't think much of it really.  I thought it might have been because I wasn't sure how I wanted my black bean burger cooked at the place I went to with my girls on Friday night.  (Ok REALLY?  Who asks you how you want your black bean burger cooked? It's a BLACK BEAN BURGER.. not a cow!)  Anyway.. I thought maybe somethin was up with what I ate there.. til later on, as I'm starving and wanting dinner.. but then, dinner didn't want to be in me at all. :(   The PAIN in my stomach was, and has been intense ever since.  It's an ulcer.. it's been confirmed.  It's awesome.  I got to spend the gest of the day on pillows and with a heating pad on my belly.   Regardless, even though I was in pain, I prepped my cinnamon rolls and biscuits last night.. and was able to create a vegan plate worthy of any Christmas breakfast today.

In no particular order, I made cinnamon rolls.  
They turned out small.  The reason I think this happened was because I rushed making the dough last night because it was hard to stand up.   They were cute though and tasted really good.  They have a sugary vegan cream cheese icing on top of them.  They certainly were best much warmer, but they were the first things to be popped in the oven and I think the last things to be eaten.  Regardless, I'll make them again, but I will make them alot bigger next time.



Biscuits and gravy.
You only see two biscuits there because it was only my sister and I eating them.   I was impressed.. my sister took leftovers of this home and said it was 'really good'!   Honestly, if you're an avid biscuits and gravy eater, it's really hard to tell that this isn't the real thing.  It's one of my favorite breakfasty things to make.. it's very yummy!





Cheesy Scrambled 'Eggs'
I like the lil spoony thing.  lol.   Obviously my 'eggs' were tofu.  I hate using alot of tofu, but I wanted to try some 'eggs' with the rest of my food today.  Tofu, some veggies, and top with Daiya and it hit the spot (albeit the wrong spot as my tummy isn't wanting me to eat today).   It made a nice colorful section on my plate. In fact, had I been really testing myself, I'd have made them 'Huevos Rancheros' and thrown some hot sauce on them.. but that would have just been evil!

I actually took a big shortcut here, but not before I did that thing I'm terrified to do and..   PEEL the dang potatoes.   (Shudder)...  AAAAHHH.  
Ok, anyway - I'd brought my cheese grater to moms to shred these potatoes and make them look more hash browny.  Oh trust me, because they look more like scalloped potatoes (thanks to my moms food processor shredder) my father let me know a couple of times what hash browns are SUPPOSED to look like.    Whatever, he ate them. ;)  Look that's him dishing some out!

Anyway, I hope everyone had a good holiday, whatever holiday you might celebrate!   I had a whole plate of food.   However, about 15 mins later I had to take a really good pain pill and sit on the floor with a heating pad and about a dozen fluffy pillows to open my Christmas presents due to the pain.  At least I was good enough to play a TOTALLY fun game of Disneyland Kinect with my neicage later on, and to get a Kundalini workout in with my sister.

My Christmas dinner?  Soda water and crackers. 
Yay.

It's beginning to look alot like _______. (Insert holiday there!)

So,
While my family celebrates something that looks a little like that photo to your left, I'm sure there are some of you that celebrate other holidays!
I COULD list them all here.. but there are actually quite a few holidays to list, and that's really a pain in my butt, so I'm not going there.   Regardless, whatever holiday you celebrate, have a great one!

Now, as for me?  This usually means I'm going to have breakfast with the family people.  But I've got a rather long list of what I'm eating here so I'm going to start on the 'breads' on Saturday.  And work my way into the rest on Sunday (aka Christmas day).  Some of you might ask.."are you staying the night with your family!?" To which I'd add.. "Yes!"  But what "I" mean is my lil at home family.  My kiddos and I.   After all, we're putting vegan cookies and flax milk out for santa and leaving him some water and carrots for the reindeer.. all good kitties shall be up in bed with me by midnight or Santa will not put anything in our stockings!  (And yes - we've got stockings!  The proof, look to your right.)

So, that being said.. once I'm done prepping breads (they'll bake at the parents house the next morning) on Saturday night, the kids and I will do what we always do.  Cuddle up, watch Rudolph again, put out our snacks for santa and deer, then head to bed.  When we get up in the morning, we'll have goodies in our stocking and something to open.  At that point I'll log some miles and head out to the parents house with my ingredients to get a head-start on the oven before the neicage-weisage needs it for her muffins.

It looks like I might be on a sugar high again.  Maybe I'd better add a mile to my morning!  Ack!

Regardless, I'm going to start on this on Christmas Eve.   So you'd better watch out, you'd better not cry, you'd better not pout I'm telling you why.

Welcome to sugartown - population, unknown.

It's time for a sugar-high.   This is going to be a two-parter.  This one part I'll be making ice cream. 
For the second part - I've got a crew set up - and we'll be making cookies.
On the menu?

For ME:   Vegan Eggnog Ice Cream. 
Reason?:  It's my main veganization this week. AND a Christmas gift for my baby's daddy, because it's his favorite.  However, I used to make it the un-vegan way for him.  This year, my baby mama gets to benefit from the VEGAN way.  I think he'll enjoy it just as much too.  He's an easy foodie to please.:) 
This is for our ornament party on Friday at the baby mama's house.   My baby mama has promised me vegan chicken and dumplins and time with my lil girls.  I'm excited.  It's going to be fun... especially now that I'm creating an "I Love Sheri" ornament for baby Lotus.  (Who wants an I love Sheri ornament?! - my BABY of course!)  She asked for it, she's getting it.. but I told her I wanted an "I love Lotus" ornament in return.   I'm so excited.  <3 

So, my ice cream-cream has already been started and is cooling so that I can churn tomorrow and it will make it there in it's glory on Friday.    Update on that in the next blog.. but let me get to my next big veganization for the weekend.

Christmas Cookie Veganization!


The Sis, AK, Megs and I are doing Christmas cookies on Sunday after Kundalini.  I'm not sure what Megs is making, and I think AK said something about 'Devil Dogs.'   My sister is making triple peanut butter cookies, a chili cookie,(?) and snowball cookies.
So what matters?  Lol.

Happy Halloween! Recipe 11, Vegan pumpkin-cream cheese cupcakes!

Let it begin.

No, actually - let it end.   I don't want to talk about the destruction that befell me at the Run Like Hell (5k thru a graveyard) this weekend..   Instead - let's talk about my veganization!

Cupcakes.. made from pumpkin guts!  Woot.  So, it started.  I brought Aleesa and Clyde in from the cold.  Clyde, because he was about to die.  Aleesa - because tomorrow is the night she'd get smashed if it were going to happen.   Good ol' cabbage night.
Everything started out correctly.. and amazingly - ended correctly!   It was a little painful at first.  Clyde would NOT cut open.  It was just agonizing.  I'm sure it's because he was cold.. it got plain chilly out last night.  (I was in it, running, I know.)   I had planned for this to go a little smoother though, the cutting part at least.

After I finally got him in a half, I pulled out the guts, and the seeds (and roasted them!)  And had planned to boil his pieces.. well, that didn't happen.  I had to skin him to boil him, and after a mini breakdown at my sink with every peeler I had (because we all know that the one thing that terrfies me most in life is peeling stuff!)  I gave up, and turned the oven on to bake the bugger.  This meant I had to cut him in fourths.. which was equally as painful as cutting him in half.. but it went fine.

So, I baked him - and his seeds.. and after about 45 mins scooped the orange deliciousness out into my blender.. and made - voila, instant (not from a can) pumpkin puree!!  (and burnt myself in the process!!)   From that point it was time to mix these babies into cupcake batter.



So, it was time to gather the stuff.  I measured out Clyde (who is now puree) and he measured up exactly to what I needed.. then I pulled out the spices and the other stuff,  and it was easy peasy from that point.  The thing that took the longest was putting the batter  in the lil cupcake cups.  I digress.. it was still simple.

Off to baking, I made the cream cheese icing - which is delish!
Once the first group was out - (this seriuosly made 72 cupcakes)..  I started icing.   Of course, you already know I had to have one, right?   DUH.
Um - YUM!?  (I sometimes impress me.)
OMYUM.

So, the 72 are baked, iced and ready to be devoured by my zombiefied office mates - that is, if they're brave enough to eat a vegan treat or two.  No matter though because if they aren't I believe I know several other people who would be glad to inhale a dozen bite sized, fresh pumpkin cupcakes with vegan cream cheese icing.  But all I have to say - is if you're not brave enough, you're going to be missing out on something... well, AWESOME!


So, until Monday - I'll close here and try to get some real serious sleep.   I'll be back to post pictures of the layout and the effects that these cupcakes had on the brave office people that tried them...  til then.  Have lovely dreams.

"OMG these are awesome".. Debra said with her eyes rolling back in her head. (coming back again and again for more - she also took the last 8 home with her for her peeps..)
"Good, and not too sweet, just the way I like it".. I heard Sam say in his office. (Who later came back and took 6 in one setting - and CLAIMED he was giving more to Cindy and Amanda.;) Later I heard Cindy did NOT have a second - Debra stole one from Sam who ate four out of those six.  I didn't keep track of who won the "I ate the most" title, however if I had my guess, it was Debra! )
"Oh these are wonderful".. Barb ran back in to tell me... Barb wants to steal my recipe - she even begged for it, bless her heart!!
"These are good!".. Lori retorted. And later on we had a convo about how she's pleasantly surprised at the experience she had with these little darlings that have tofu in them (I guess she's had some not -so-great tofu experiences).
Hats off to Deanna for being braver than Connie who never did come back and get one!

Tina F. thought they were "Delicious!"
"Man those are good!" - Amanda hollered. (and she stole more later - vying for the title of having the most cupcakes vs Debra and Sam)

Kyle came in just as I put a fresh batch out with an 'oooh this sounds good!'
Chandy and her daughter were excited to try because they've heard how 'good' they were.

Just some of the feedback I received at work from this latest veganization... now, the real question is - out of the full 40 that I put out - did I have any left?  Nope - I got one, and gave the rest to Debra.   Go her.  I'll have to find out if her peeps enjoyed them later on.

**As for yours truly **
So.  I dressed up to channel Tippi Hedren (The Birds, 1963).  However, my largest bird fell off and the smaller one wasn't cooperating, so I just dealt with my mini crows.  One on my hat and the other on my collar.. and of course, the blood where they'd pecked at me.    :P   The gloves I wore were hard to type in, but other than that, I did ok (save for the fact that I like to sit in easy pose in my office chair, and that's impossible in 3 inch heels, a mini dress with a crinoiline and skin colored fishnets, but I digress.. it's all good. I survived.. BARELY, but I survived.

(I absolutely adore my 'old standards' Pandora channel... especially when I'm feeling scared and low.)

Current Craving - Peace, white light.. anything that removes this amazingly un-holy, and un-human "thing" from me. :( :(  And honestly peeps.. I'm not trying to be Halloween scary.  I had (and am still having) a moment (several, really) with a very real, very evil spirit this weekend.

Current Motivation - The bravery of my un-vegan co-workers! (BEWARE.. I have two years of this - more goodies are on their way!)
